A simple spicy Arrabiata Pasta. Can be cooked with any pasta shape or noodle. Satisfies any appetite.
Serves 2
200g of pasta
2tsp Olive oil
200 g of diced canned tomatoes or 3 medium size ripe red tomatoes
1tsp lemon juice
2 cloves of garlic
1/2 tsp chili flakes
1/2 red pepper
2 tsp balsamic vinegar
1 tsp sugar
Optional diced bacon or diced chicken
-Bring a pot of salted water to the boil. Add pasta and cook until al dente
-Meanwhile, heat the oil in a medium sauce pan. Saute the garlic, chopped tomatoes and red peppers until soft. Add the chili flakes, sugar, vinegar and lemon juice. Let simmer for 3-4 mins
-Drain pasta and add to sauce pan with other ingredients. Season with salt and pepper to taste. Toss and coat well.
-Transfer to serving dish. Garnish as desired. Enjoy :)
